EMILIA ROMAGNA
AltoVanto Bianco is a white wine produced from 100% Grechetto Gentile, locally referred to as Pignoletto, in Monteveglio, at the heart of the Colli Bolognesi. This wine is a true testament to this remarkable land, where ancient rural traditions are still alive in the fields and vineyards, and each bottle captures a piece of that history. Altovanto white will surprise you with its depth and connection to the terroir. Grape variety
100% Crechetto Gentile (Pignoletto).
Vineyards of origin
The vineyards are located in the hills of Montebudello area, the heart of Colli Bolognesi.
Soil: Medium-textured, tending to clayey.
Training system: Guyot, 5,200 plants per hectare.
Season in the field: The vineyard spans one hectare. The east exposure and moderate altitude between 150-200 meters above sea level allow optimal ripening.
Average yield: 80 q/ha.
Vinification
The grapes picked, carried out in 20 kg crates, between September and October. Fermentation takes place in stainless steel tanks at a controlled temperature of 14-16°C. Bottling is unfiltered.
Aging: 6 months of aging in the bottle to harmonize Flavors.
Tasting notes
The wine presents a clear straw-yellow colour with brilliant reflections. On the nose, it reveals an intense, fine, and persistent aromatic profile, offering floral notes of acacia and potpourri, alongside vibrant aromas of crisp, white-fleshed fruits, such as white peach and pear. Subtle vegetal nuances and mineral undertones add complexity to the refined and well-balanced bouquet.
On the palate, the wine is medium-bodied, displaying perfect balance between its fresh acidity and texture. A slightly bitter aftertaste lends character, while the persistent, dry finish immediately entices another sip.
Pairings
Ideal with vegetable-based pasta dishes. Excellent with “tortellini” in broth, fish, white meats, and delicate cheeses. Excellent pairing also with the light Nordic cuisine of Denmark.
