AltoVanto is a red wine made from 100% Merlot, produced in Monteveglio, at the heart of the Colli Bolognesi. The first vintage dates back to 2004, with a limited production of just 3,000 bottles. This wine is a true testament to this remarkable land, where ancient rural traditions are still alive in the fields and vineyards, and each bottle captures a piece of that history. Vineyards of origin

The vineyards are located in the hills area of Montebudello area, the heart of Colli Bolognesi.

Soil: Medium-textured, tending to clayey, with an east-facing exposure and altitude between 150-200 meters above sea level.

Training system: Guyot.

Season in the field: The vineyard spans one hectare with 5,200 plants per hectare. The east exposure and moderate altitude allow optimal ripening.

Average yield: 40 q/ha.

Vinification

Fermentation takes place in stainless steel tanks at a controlled temperature of 28-30°C, with a maceration period of 22 days and daily pump-overs. Malolactic fermentation is carried out in barriques.

Aging: 18 months in French oak barriques from Allier and Troncais forests, 60% of which are new, imparting a fine, well-integrated oak influence. The wine is bottled without filtration, followed by an additional 6 months of aging in the bottle to harmonize flavours.

Tasting notes

This Merlot presents an intense ruby red colour. On the nose, it opens with rich aromas of sour cherry, blueberry, and plum, followed by spicy nuances and subtle notes of cacao and coffee. On the palate, the wine is soft, velvety, and enveloping, with well-rounded, mature tannins. It is full-bodied and showcases excellent structure with a persistent, harmonious finish.

Pairings: An excellent match for pasta dishes, roasts, braised red meats, and semi-aged cheeses. It also pairs beautifully with grilled meats, enhancing the wine's complexity.
