Bosco Sant'Agnese - Covante - Beneventano Coda di Volpe IGP 2024
BENEVENTANO IGP - CODA DI VOLPE - CAMPANIA
In Calvi, a small village in the heart of the Sannio a few hundred meters from the Taurasi hills, Antonio Palermo and his wife Angela farm five hectares of estate-owned vines, biodynamically since 2013. Coda di Volpe, named for its long bunch shaped like a fox's tail, is one of the historic white grapes of Campania. Covante is its honest, low-intervention expression: certified organic, fermented in steel with a brief skin contact, and released only after a long rest.
Grape variety
100% Coda di Volpe. Certified organic (CODEX).
Vineyards of origin
Estate-owned vineyards in Calvi (Benevento), in the middle Calore valley of the Sannio, at about 400 meters above sea level.
Soil: Clay.
Training system: Espalier, spurred cordon.
Season in the field: Manual harvest between September and October.
Vinification
Fermentation in stainless steel with a very brief maceration on the skins; minimal use of sulphites.
Aging: Stainless steel, bottled at least one year after the harvest.
Tasting notes
Bright golden yellow. On the nose, pear and yellow apple, ripe apricot and citrus peel, with hints of honey and a flinty, mineral note. On the palate, dry and harmonious, with a round texture, gentle freshness and a medium-long, savory finish.
Pairings
Vegetable dishes, seafood and shellfish, fried fish, fresh cheeses and Campanian appetizers. A natural partner for pasta with vegetables and for pizza.
Alcohol content and serving temperature
Alcohol content: 12,5% Vol.
Serving Temperature: 10 - 12°C.
