Pisoni - Codecce 2025
VIGNETI DELLE DOLOMITI IGT - TRENTINO
After years of research, the Pisoni family developed an innovative winemaking method that eliminates the need for added sulfites while ensuring wines of the highest quality.
Codecce takes its name from the vineyard of the same name, nestled on the San Siro hill—a perfect setting for cultivating white grapes that achieve optimal ripeness and aromatic concentration.
This wine stands out for its full, ripe, and exotic aromas, paired with a soft yet fresh and crisp taste, embodying the Valle dei Laghi—a unique Alpine region with a Mediterranean climate.
Grape variety
70% Sauvignon blanc, 20% Goldtraminer, 10% Nosiola.
Vineyards of origin
The Codecce vineyard, located on the San Siro hill, is an ideal site for cultivating white grape varieties, which achieve perfect ripeness and remarkable aromatic concentration here.
Soil: Chalk-rich calcareous soils.
Training system: Guyot-trained espalier.
Season in the field: The excellent climatic conditions ensured optimal phenological ripening, preserving aromatic precursors in the best possible way. This balance is beautifully reflected in the harmony between acidity and alcohol. The grapes, hand-harvested in crates, were picked at the middle of September.
Average yield: 50 q/ha.
Vinification
Fermentation takes place in small stainless-steel vats, lasting approximately 15 days.
Aging:12 months in stainless-steel, followed by 6 months in the bottle.
Organoleptic aspects
Deep yellow with greenish highlights. The nose reveals aromas of ripe apple and exotic fruits, such as passion fruit and pineapple. On the palate, it stands out for its balance, with a soft texture, vibrant savoriness, and an elegant persistence.
Pairings
Mozzarella, burrata, stracciatella, and other traditional Italian dairy products pair beautifully with grilled vegetables or in the classic "caprese" salad. This wine also complements Nordic fish dishes exceptionally well.
