TRENTINO
Man, vine, soil, and climate—great wines are born from the intricate interplay of these elements. In the Valle dei Laghi, these factors form the foundation of an ancient tradition that continues to thrive, driven by the passion of its winemakers: the production of the prized Vino Santo Trentino.
This unique wine begins with the careful selection of the finest Nosiola grapes, an indigenous variety cultivated in a few select, old vineyards. The fully ripe grapes are laid out on racks, known as arele, and placed in attics. These spaces are naturally ventilated year-round by the "Ora del Garda," a characteristic breeze blowing from the nearby Lake Garda. The drying process lasts over five to six months, extending until Holy Week.
Once pressed, the naturally slow fermentation begins. Due to the extremely high sugar concentration, this process can take several years. After bottling, the wine's life begins anew, with its aging potential extending beyond fifty years.
Vino Santo Trentino is not just a wine—it is a testament to the history of this land and the enduring memory of its people.

The family’s San Siro vineyards
Soil: On chalk-rich calcareous soils, Nosiola has found one of its ideal growing environments.
Training system: Pergola Trentina, which represents the local tradition, providing natural protection to the clusters through its canopy, making it particularly suitable for the mild and breezy climate of the Valle dei Laghi.
Season in the field: The grapes, hand-harvested in crates, were picked at the end of October. Only a very small selection of the grape clusters is chosen—those with fewer berries and perfect quality, harvested at an advanced stage of ripeness.
Average yield: 50 q/ha.
Vinification
After being dried, the Nosiola grapes affected by noble rot are pressed, and the must ferments directly in small oak barrelsAging: 12 months acacia tonneaux, followed by 4 months in the bottle.
Organoleptic aspects
Amber yellow, deeply saturated with golden reflections. The nose offers an intense and persistent bouquet, evoking exotic fruits, dried apricot, medlar, and walnuts. On the palate, it is delicate, round, exceptionally harmonious, with an impressively rich structure.
Pairings
Traditionally paired with dry pastries, the Vino Santo Trentino is perfect paired with long matured alpine cheeses and blu-veined cheeses. Excellent with foie-gras. Alone, at the end of the meal, it is a perfect dessert.
