Perched in the enchanting Valle dei Laghi (Valley of the Lakes) in Trentino, the Pisoni Winery is a historic gem nestled between the majestic Brenta Dolomites and the northern reaches of Lake Garda. This picturesque landscape, shaped by the cooling Ora del Garda breeze, creates a unique microclimate ideal for crafting exceptional wines.

Stefano and Marco Pisoni grew up immersed in their family’s deep-rooted passion for winemaking. Their family’s connection to viticulture is a thread woven through centuries, even appearing in records from the Council of Trent (1545–1563), where Carlo Antonio Pisoni was named an official supplier of wines and spirits.

Sustainability and Biodynamics

Since the 1990s, the Pisoni family has embraced organic and biodynamic farming methods, integrating lunar cycles, natural composting, and biodiversity into their practices. They believe in farming harmoniously with nature, ensuring the vineyard’s health for generations to come.

Signature Techniques

The arèle drying method, used for their Nosiola and Rebo grapes, is a cornerstone of their winemaking. This labor-intensive process concentrates flavors while preserving the grapes' purity, resulting in wines of extraordinary complexity.

The Vineyard: A terroir like no other

Cantina Pisoni’s 16 hectares of vineyards are divided between:

  • The Sarca River Plain: With sandy and silty soils, ideal for freshness and minerality.

  • San Siro Hills: At 450 meters above sea level, this limestone-rich terrain enhances complexity and structure.

The microclimate, influenced by Lake Garda and the Dolomites, ensures the grapes’ health and longevity, producing wines with a signature elegance and minerality.

Challenges and triumphs: Resilience and innovation

The Pisoni family’s history is one of perseverance. During World War I, their ancestors transformed a mountain air raid shelter into a wine cellar, which remains in use today for aging sparkling wines.

Their early adoption of biodynamic farming faced skepticism but has since proven transformative, earning acclaim for producing high-quality wines while preserving the environment.

Marco’s personal notes

I met the Pisoni brothers and their entire crew (Matteo and Daniele) during the first year of my sommelier journey. I was on vacation in Trentino with my three children, and on my way back home, I asked one of my instructors for advice on a winery to visit. 

So, I set the GPS, and after exiting the highway in Trento, a few winding roads took me through steep valleys and rocky cliffs into the “Valle dei Laghi”. I couldn’t believe my eyes—this place is a true paradise. To the north, the Brenta Dolomites; to the south, Lake Garda; and all around, a lush green so vivid it seems almost unreal.

When I arrived at the winery, I was greeted by Daniele, and Matteo, the young oenologist, walked me through each wine, telling me their stories—how they were crafted in the bottle and even how their names were chosen (anagrams or combinations of names from the younger descendants of Marco and Stefano). Then Marco joined us, followed by Stefano, and even the “family patriarch” (how they nickname him), Arrigo. At over 90 years old, you can still find him on the estate, carving wood into statues or performing manual *remuage* for the Trentodoc in the ancient cellar carved out of a World War II trench. Vittorio proudly took me on a tour of the winery and vineyards, sharing the story of his family with unmistakable pride. Marco then invited me to join a tasting of their reserves, along with other guests, guiding us through the evolved aromas and flavors of their wines.

The Pisoni winery holds a special place in my heart for the emotions it gave me—and continues to give me every time I taste their wines. Their whites are refined, fragrant, and delicate; their reds are complex, balanced, and bold; and their raisin wines (Vino Santo and Reboro) are works of art—a true poetry in a glass.
